At work, the Assistant Director of Housing—Brian—is retiring, so we're having a potluck luncheon. I'm going to make my shrimp dip. The recipe follows.
Ingredients
- 16 oz. cream cheese, softened
- 4 scallions, sliced thinly
- 4 oz. tiny shrimp, drained
- 3 tablespoons milk
- salt to taste
Steps
- Mix the cream cheese and milk.
- Fold in the onions and shrimp.
- Season to taste.
- Chill for several hours before serving with crackers.
Tips
- Reserve some scallions and/or shrimp for garnish
- For a creamier dip, use more milk. For a thicker dip, use less milk.
- For a stronger shrimp flavor, use the water from the shrimp instead of some or all of the milk
- Use this as a filling for stuffed, deep-fried wontons, similar to crab rangoon
